Finger - Limes, approx. 60-70 pieces

Finger limes are a special type of lime from the rainforests of Australia. Their name comes from their appearance - the 6-8 cm long fruits do indeed resemble a finger. The color of their peel and flesh varies from light green to pink. But the real sensation is the pulp. Halve the fruit lengthwise. Using the handle of a teaspoon, scrape out the pearls from the four chambers. Each fruit contains about a tablespoon of them. The texture of these caviar-like spheres (2-3 mm) is crunchy, and their taste is mildly tart. They sometimes float in liquids. They are delicious in cocktails, as a vinaigrette for seafood, and as a garnish for sauces and soups. They also pair well with Asian dishes, pastries, and definitely with fish.
