De Cecco Rigatoni, No.24
Rigatoni belong to the family of straight-cut, ridged short pasta shapes. They have a diameter of 16 mm, are on average 45 mm long, and between 1.11 and 1.18 mm thick. They are said to originate from the Campania region, but this cannot be definitively determined. This versatile pasta shape can be used in a variety of ways and served with a wide range of sauces: especially meat sauces, braised meat sauces, mushroom and meat sauces, beef and pork sauces, and sausage and chicken ragu. For perfect results, the sauce must be thin enough to penetrate the ridges of the pasta.
