Nutmeg, whole
Nutmegs contain a whole range of essential oils. These flavors are volatile, so the nuts should only be grated when necessary. Nutmeg goes well with dairy products, vegetables, potatoes, eggs, cheese and also sauces - such as the Bechamel sauce. Desserts and sweet pastries can also be flavored with the spicy, warm notes of nutmeg. As a component of some peppery spice mixtures, nutmeg underlines and completes the expression of the other spices and thus the overall character of a mixture.
