The tagliatelle, from the family of flat long formats, come from the Liguria region. They are 0.55 mm thick and 5.60 mm wide. Tagliatelle can be used in many different ways and served with a wide variety of sauces. They taste excellent in pasta dishes or casseroles; they are best served with fish sauces, seafood, butter, white sauces with milk and cheese and possibly with the addition of curry or saffron.
