Sea grapes (Umibudo algae) in Lake
These edible green algae are a specialty of Okinawa province. Their texture, similar to caviar, makes these pearls an interesting ingredient for vegetarian and vegan cuisine. Before eating, gently rinse the pearls and, if necessary, soak them in fresh water for 2-3 minutes to restore their crisp texture. Then consume them promptly. You can enjoy Umi Budo on its own with a little vinegar, soy sauce, or ponzu, for example, as an aperitif or with champagne, much like real caviar. Umi Budo tastes excellent with rice and also pairs very well with seafood.
