Hon Mirin, aged 5 years, 14% vol., Senoo Shuzo Corp., Japan
A genuine Hon Mirin, traditionally made with only three ingredients: mochi (sticky) rice, kome (rice) koji, and rice shochu. Naturally, without added sugar or flavorings. This extra-long aged mirin has wonderful caramel notes and a depth of flavor that can only be achieved through extended aging. Perfect for all Japanese dishes, cocktails, or desserts. Can also be served neat. A rare quality, even in Japan. Senoo Sake Brewery, located in Okayama Prefecture, has been operating since 1904 and is now in its fourth generation. Handcraftsmanship is still highly valued here, and the key ingredient, rice koji, is traditionally produced without machines.
