Sanbaizu - Bonito - Vinegar (Dashi Vinegar), Sennari, Japan
Sanbaizu is typically made with vinegar, mirin/sugar, and shoyu (soy sauce) and is a classic vinaigrette in Japanese cuisine. This version is enhanced with katsuoboshi (bonito flakes). Sanbaizu is not only served with seafood (spider crab, oysters, squid), etc., but also forms the basis for sunomono (pickled dishes) such as seaweed salad, cucumber salad, etc. This high-quality sanbaizu is produced without artificial flavorings or other additives. Sennari (Hiroshima Province) is a traditional vinegar manufacturer that uses exceptionally pure spring water for all its products.
