Kinjirushi Wasabi - Wasabi preparation

Wasabi is a green root vegetable with a distinctly pungent flavor. Originally from Japan, it thrives only in flowing water. This root, similar to horseradish, is now also cultivated in New Zealand and the USA. Wasabi is traditionally used as a condiment for sushi and roasted nuts and legumes. The characteristic wasabi pungency comes from the volatile mustard oils it contains, causing a burning sensation in the throat and nose. Wasabi is available as a fresh root, powder, or paste.
