Cardamom, whole, black, Heera
Unlike green cardamom, which is considered a cooling spice, black cardamom is a warming spice. It is therefore a key ingredient in every garam masala, along with cloves, cinnamon, and black pepper. The seeds have a tar-like aroma and a piney flavor with a tart, smoky, earthy note. They are used to add a pleasant depth to masalas and spice blends in the tandoori style.
