The shad is a rare fish species. Originally a saltwater fish, this type of herring migrated to freshwater to spawn and in this case remained in Lake Garda. The delicate fish flavor is enhanced by fennel, onions, and bay leaf. Besides being served warm with pasta, the ragu is also delicious cold on a crostini.
