Asiago DOP, semi-hard cheese made from cow`s milk, young, Guffanti
This mild, pleasant cheese, made from whole cow`s milk, comes from the Veneto region. It matures for around 40 days and is an excellent breakfast and dessert cheese, sweet, milky, and full-bodied. For dessert, it pairs well with grapes, figs, and apples. It`s also wonderful in cooking, whether as a cheese sauce for gnocchi or macaroni, for topping vegetables, or as a filling for the now-popular Cordon Bleu.
