Formaggio con Tartufo, hard cheese made from cow`s milk with summer truffles

This hard cheese, made from cow`s milk in the style of Parmesan, is flavored with summer truffles. Its rennet is vegetarian, derived from the artichoke plant, and not from calves` stomachs. It tastes delicious as small chunks with an aperitif and, grated, enhances risotto and pasta.
