Risotto pomodoro e basilico, risotto with tomato and basil, La Balocchina

The combination of rice, sun-dried tomatoes, and basil is summery and goes well with grilled fish and meat. This risotto also makes a good primo piatto (first course) with grated Pecorino Romano and salad. Tip: Clumping is normal in the mixture, as the granulated stock already added will absorb water.
