Yuzu Kosho - Paste made from green chili and yuzu, Fundodai Japan
This Yuzu Kosho is made from 100% locally sourced ingredients from Kumamoto Province. It has a creamy, finely textured consistency. Originally a specialty from southern Japan, this paste, made from the aromatic peel of the yuzu and green chili, is popular throughout Japan. The aroma of this unique citrus fruit blends with the tangy heat of the chili. This particular variety has very little bitterness, as the white pith is not used. You can enjoy this tangy-fruity paste with grilled meat instead of mustard (in small quantities) and even with cheeses such as Camembert. Mixed with cream cheese on bread or crackers, it makes a delicious appetizer. In Japan, Yuzu Kosho is also used to season miso soup and served with ponzu as a dip. It can also be used in dressings, ceviche, or shoyu-based marinades when combined with olive oil. The possibilities are endless.
