Dashi Fond Concentrate, dark, with Katsobushi (Bonito), Jagisawa Japan
This fine and well-rounded Dashi Tsuyu, prepared with katsuobushi and rausu konbu, is very robust and concentrated. It`s ideal as a base for noodle broths (udon and noodles), but also works well as a diluted tempura dip (Ten Tsuyu) or as a base for Japanese nimono (lightly braised dishes), such as nikujaga. It`s a fantastic product for adding that special Japanese touch to dishes without having to make dashi yourself, while still experiencing an uncompromisingly natural flavor. The small Yagisawa Brewery, established in 1807, was completely destroyed by the tsunami but slowly rebuilt itself, step by step, to pass on its traditions and fantastic specialties to the next generation.
