A full-bodied, rich Merlot with aromas of wild mushrooms, liquorice and a little vanilla. Matured in French and American oak barrels. Jean and Caroline Panis` philosophy is to produce full-bodied, intensely fruity wines from ripe, low-yield grapes from environmentally friendly cultivation. The Minervois is famous for its powerful but elegant red wines, which are influenced by the Mediterranean-Atlantic climate. The Chateau du Donjon also owns some vineyards in the AOC Cabardes, west of the Minervois, which, at just under 600 hectares, is one of the smallest and least known in the Languedoc.
