Geifertshofener Classico, semi-hard cheese, half wheel, organic
cooled product 0 ° C to + 7 ° CDE - ORGANIC - 001 Hay milk cheese from the Geifertshofen village dairy. The `Geifertshofener Classico` is a cheese matured for at least 12 months with mites, made from fresh hay milk with a natural fat content. In brick-vaulted cellars, it is regularly treated with salt water and red wine yeast, resulting in a somewhat rustic/wild natural rind with natural cheese mites. As it ages, the cheese mites give the `Classico` a robust, spicy aroma, yet it retains the caramel-like melt typical of the Geifertshofen village dairy. It has a few small, round holes. Perfectly paired with the `Classico`: full-bodied and rich red wines aged in barriques or Beerenauslese - simply wonderful - a top-quality product for cheese lovers!
