Pomodori secchi, dried tomatoes, De Carlo

Bright red, with the scent of ripe fruit and a pleasant, yet yielding consistency, are the dried tomatoes that come directly from the vegetable gardens of the well-known olive oil producer DeCarlo. They are hand-selected and halved and then carefully dried. Just add a pinch of salt and the traditional winter supply is ready, as it was intended to be in Apulia. Today, Pomodori Secchi are used for antipasti, marinated in olive oil on crostini, or used to season sauces and stews.
