Squid - color, powder
Cuttlefish ink can be used to color fresh pasta dough or risotto black. The ink is sprayed into the water by the cuttlefish (Sepia officinalis) from a gland as it escapes, making itself invisible. To use the powder: mix 1-2 parts powder with 8-9 parts water. Dosage for pasta: 2-5% liquid cuttlefish ink to the total amount of pasta dough, depending on the desired color intensity.
