Agazoon, Agar - Agar, Biozoon, E406
Agazoon® contains agar-agar (E 406), which is extracted from the cell walls of certain algae or seagrass species. It is a polysaccharide (complex sugar) and is available as a white, yellowish, or gray powder. Agazoon® can be used as a thickener, gelling agent, or stabilizer. It dissolves easily in cold or warm liquids and gels upon boiling. Gelled foods are highly stable and can be reheated (up to 80°C) or served warm. In the food industry, agar-agar is used to produce soft caramels, marshmallows, meringues, glazes, fondant, fillings, jams, processed cheeses, yogurt, ice cream, jellies, and canned meats. At home, it can be used as a vegetarian substitute for gelatin.
