It binds a relatively large amount of water, making the dough more elastic. The fat content of 4-7 percent is sufficient to bind doughs and allows for egg-free baking. Antioxidant-active components increase the shelf life of baked goods. Lupin flour also gives baked goods a nutty flavor and a light yellow color.
