Aroma: This rum needs time to develop. The initial impression is reminiscent of nail polish and plastic, but wonderful aromas of figs and citrus fruits emerge over time. Taste: Grassy notes with a hint of fig. A slightly bitter finish, yet very well-rounded. SBS Australia 2007 is a single cask bottling with only 323 bottles. The rum matured in an ex-bourbon barrel and was bottled in 2020 at cask strength of 55.0% ABV. As always, it was non-chill filtered.
