Antoniewicz - Baldmoney Salt (Bärwurzsalz)
Baldmoney, also known as bearwort, is a highly concentrated specialty from the Black Forest or Bavaria, familiar to almost everyone. This subalpine plant is native to Europe. In the Scottish Highlands, it`s used as a culinary herb. The delicate, dill-like leaves and underground parts of the plant have a robust, hearty flavor that pairs well with chives in herb quark, for example. In herb blends, it enhances the typical alpine hay aroma when used as a coating on creamy semi-hard cheese. For our Baldmoney Salt, we dry blossoms and leaves that are hand-harvested from wildflower meadows. We take care to leave enough Baldmoney plants to ensure natural regeneration. Gentle drying and careful grinding without heat give our salt its strong, chewy, and intense aroma. We recommend it with vegetables, in salads, with scrambled eggs, or with butter on fresh boiled potatoes.
