Spice Garden Cinnamon Blossoms, whole
Cinnamon blossoms are the unripe fruits/flowers of the cinnamon tree. Less aromatic than the more familiar cinnamon bark, these blossoms, reminiscent of cloves, are used for their fragrance. To allow this mild, sweet scent to develop, they should be ground or crushed in a mortar just before use. Whole cinnamon blossoms are decorative in infused liqueurs and alcoholic beverages. Ingo Holland studs half a lobster tail with the spice.
