The highly aromatic rosemary goes well with many meat dishes, especially lamb, veal, and game. The herb also provides the right spice for Mediterranean vegetables and potatoes. When grilling, you can add rosemary to the embers and give your food a nice smoke flavor. For fish dishes, however, it is too prevalent with its essential oils. Try rosemary sparingly with pizza, focaccia, pasta or risottos.
