Bay leaves have a strong, aromatic, slightly bitter, and pleasantly acidic flavor. Their flavor is ideal for stocks, soups, and sauces, where they are simmered. Use them to flavor fish, meat, poultry, and game, as well as stews, sweet baked goods, and fruit compotes. For a four-serving dish, two to three bay leaves, removed before serving, are perfectly sufficient.
