Long pepper is also known as Bengali, Balinese, stick pepper, or Jaborandi pepper. Originating in India and Indonesia, it was already prized in Roman cuisine. Its aroma is reminiscent of chilies and wood. With its mild, warm heat, it pairs well with savory-sweet or sweet-and-sour dishes, as well as with Asian and Indian cuisine and spice blends. Don`t worry-the pepper`s heat lasts no more than 5 minutes. The hazelnut-like sticks should be broken and ground or crushed in a mortar and pestle just before use.
