Spice Garden Cubeb pepper - Javan pepper, tail or stalk pepper
Cubeb pepper is primarily cultivated in Indonesia and some African countries and is not readily available in Europe. It is characterized by dry, woody, camphoraceous, and menthol-like aromas, with bitter rather than spicy notes. The scent is reminiscent of lavender; at the very least, it is very floral and should be ground just before use. This spice, also known as Javanese pepper, is excellent with meat and vegetable dishes. The stemmed berries can also be used to lard meat. They are equally suitable, whole or ground, as a garnish. For the adventurous, try combining it with tonka bean, vanilla, and fresh tropical fruits.
