Muscovado sugar comes from the island of Mauritius. It is made from cane sugar and remains unrefined and natural. The chocolate-colored, slightly moist sugar offers strong aromatic notes with its natural molasses content. The spectrum ranges from caramel to malt to light liquorice flavor. This goes well with sweetening strong espresso, in the kitchen for flavoring sauces and marinades, and in the patisserie for chocolate creations.
