Mini croustades, Ø 3.8 cm, shortcrust pastry
Crousstads (made from shortcrust pastry) can be filled cold or warm in savory variations. For warm fillings, the small bowls are preheated in the oven or in the pan and served immediately after filling. With a cold filling, the croustades stay crispy for a long time if they are brushed with melted butter beforehand or laid out with a dry lettuce leaf.
