maple sugar
Maple sugar is sugar obtained from the sap of the maple tree. The sap is extracted by tapping the trunks, and evaporation first produces maple syrup. Further evaporation causes the sugar to crystallize. This sugar, sometimes slightly granular to powdery, is ideal for sweetening beverages and baked goods. In its purified state, maple sugar is identical to ordinary sugar in composition and properties. Its aroma is reminiscent of licorice or caramel. However, it is not suitable for making creme brulee. Under intense heat, the sugar first begins to bubble, then immediately burns.
