Literally translated, `The emerging or blossoming.` After milling the Ogliarola and Coratina olives, small pools of oil form on the olive pulp, which are skimmed off by hand. The aroma is predominantly green, reminiscent of grass, paprika, sorrel, and apple, and its delicate flavor is mild and sweet, with a strong almond finish.
