Palm hearts, from Hellriegel
Palm hearts are the tender inner part of the so-called apical meristem, from which the fronds of various palm species develop. Their delicate flavor is reminiscent of pickled artichokes and pairs well with salads and seafood dishes. They are also delicious baked or served with a bechamel sauce alongside cooked ham. The simplest way to enjoy them is to slice them thickly and dress them with vinegar and oil.
