This light fish stock from the Chef Fond Premium line tastes pleasantly of fresh fish stock with white fish and scallops (it is by no means sticky). As a high-quality basis for fish soups, as a flavor carrier for crustacean salads and of course as a basis for white/light sauces. The stock can also be processed and clarified cold. Chef Premium Funds are reduced with original ingredients and spices at low temperatures under vacuum, they are concentrated and have a pure, authentic taste. All funds are declaration-free, suitable for espuma and can also be stirred into cold liquids. Once opened, they should be stored at a maximum of 4°C and used within 12 weeks.
