The blue color of this rock salt from Iran comes from the blue-tinted sylvite, or potassium chloride, content. The crystal lattice structure of this mineral was altered by the very high pressure during salt crystal formation. This causes light to refract in a special way, giving the salt a blue appearance. This rare table salt, with its very intense flavor, pairs well with seafood, meat, and even truffle dishes.
