Raw pistachio marzipan, PM, 43% Mediterranean almonds and 9% pistachios, Lubeca

Pistachio marzipan - a premium-tasting raw paste made from sweet, aromatic Mediterranean almonds and pistachios. It is particularly suitable for modeling and further processing. At Lubeca, the white-skinned almonds and pistachios are finely rolled with sugar and water using granite rollers. This gives the marzipan a slightly fibrous texture for the perfect bite. The paste is then roasted in copper kettles. This process triggers the Maillard reaction, aided by the catalytic effect of the copper. This gives the marzipan its characteristic roasted aroma and classic, unmistakable flavor. Rapid cooling of the paste ensures the preservation of the valuable almond and pistachio aroma.
