You can color fresh pasta dough or risotto black with squid dye. The tinta de calamar is injected into the water by the squid (Sepia officinalis) escaping from a gland to make itself invisible. To use the powder: Mix 1-2 parts powder with 8-9 parts water. Dosage for pasta: 2-5% liquid squid color on the total amount of pasta dough, depending on the desired color intensity.
