Squid - liquid color

You can use squid dye to color fresh pasta dough or risotto black. The squid (Sepia officinalis) sprays this dye from a gland into the water as it escapes, making itself invisible. Dosage for pasta: 2-5% squid dye to the total amount of pasta dough, depending on the desired color intensity.
