Emulzoon contains GMO-free soy lecithin (E322), which acts as an emulsifier, binding fat and water together. Emulzoon can be used to make fat-based dressings (e.g., vinaigrettes) or mayonnaise. It can also be used to create airy foams that produce an aromatic, melt-in-the-mouth texture. Example: Cranberry Foam: -> Mix 100ml cranberry juice + 20ml cranberry syrup. -> Add 2 level spoonfuls of Emulzoon. -> Whisk with an immersion blender until light and airy. -> Let the mixture settle slightly, then skim off any air and serve.
