Citras is produced from sodium citrate, which is primarily derived from citrus fruits. In the food industry, sodium citrate is commonly used to prevent discoloration in cut fruits and vegetables. It has the property of reducing the acidity of foods. Therefore, Citras makes it possible to produce spherical products, such as melon caviar, using highly acidic ingredients.
