Calazoon (calcium lactate), Biozoon, E 327
Calazoon® is calcium lactate (E 327) and serves as an additive for various texturizing agents (alginate, gellan, and iota) that require ions (calcium or potassium) to form gel structures. These gels are perceived as particularly heat-stable, firm yet flexible, or quick-setting, making them attractive to the food service industry. For some preparations, calcium- or potassium-rich ingredients such as milk or whey are sufficient. For specific applications, such as forming gel capsules, the calcium or potassium concentration must be higher than in most common kitchen ingredients. Calazoon®, characterized by its very mild and pleasant taste, is required for these applications. In addition to the calcium ions, which are important for preparation techniques, the residual salt can significantly influence the sensory perception of the salt solution (slightly bitter, salty, mildly acidic) as well as the reaction rate. The reaction rate is important when shaping capsules, as the success of round shapes can be controlled via the viscosity of the capsule mass and the speed of gel formation.
