For spherification and reverse spherification. For spheres (bubbles): Add alginate to the liquid. Prepare a calcium chloride water bath and add the alginate solution; spheres will form. For reverse spheres: Add gluconolactate to the liquid. Prepare an alginate water bath and add the gluconolactate solution; reverse spheres will form. Alginate is cold-soluble. The pH should be between 5 and 7.
