The strawberry tree grows as a shrub in Mediterranean regions, has white blossoms, and belongs to the heather family. Strawberry tree honey is an absolute rarity, as the bees are usually almost dormant by the time of the autumn flowering season. Furthermore, this period is often characterized by rainy, cool weather. Therefore, harvests are extremely limited. The honey is light amber in color when liquid and crystallizes quite firmly. It has an exceptionally bittersweet taste and an astringent effect. The bitter notes of this honey pair very well with sheep`s cheese, pancakes, and for refining sauces.
