Gegenbauer Fruit - Apricot Vinegar, 5% acidity
Apricots are 4-8 cm long, spherical to oval drupes. The skin is velvety, sometimes smooth, and ranges in color from pale yellow to orange-yellow, with a reddish tinge on the sun-exposed side. The characteristic seam, dividing the fruit into two halves, runs from the stem to the base of the pistil. The flesh is white, yellow, or intensely orange, juicy, and exceptionally flavorful. Our apricots are harvested at the peak of ripeness at the Harmer estate in Stripfing, about 25 km northeast of Vienna, sorted, gently pressed, and delivered to our vinegar brewery. The apricot vinegar is distinguished primarily by the interplay of the various fruit acids with the acetic acid, which clearly expresses the typical apricot aroma.
