This balsamic-sherry vinegar is produced exclusively from Pedro Ximenez`s 25-year-old solera. It impresses with its thick consistency and delicate sweetness. It is excellent for refining sauces and dressings. Unlike most aged balsamic vinegars, which are simply sweet, this one is distinguished by its residual acidity of 7%.
