Grains of paradise - Guinea -, Melegue -, Malagetta -, Maniguette pepper
Grains of paradise were formerly used in Europe as a substitute for black pepper. Today, they are almost exclusively found in North Africa, for example, as an ingredient in spice blends. They are very difficult to obtain in Europe. They are used in traditional recipes, but occasionally also appear in sausage or mulled wine mixtures. They enhance everyday dishes and pair very well with vegetables or poultry. Grains of paradise have a sharp, warm, and slightly bitter aftertaste.
