Wild Rosella, calyx of wild hibiscus

Wild Rosella is the Australian wild hibiscus, whose bright red, flower-shaped fruits and fleshy calyxes are used in a variety of bush cuisine. The more than 50 known species are found in drylands, rainforests, and the Sydney region. Their tart raspberry-rhubarb flavor is prized in sauces, relishes, pie fillings, pies, ice creams, syrups, and sorbets. For use as an edible garnish, the decorative fruits should be soaked in sugar syrup beforehand to reduce their tartness.
