Ingo Holland`s Purple Curry blend is a wonderful seasoning for light meats: perfect with scallops, fish, poultry, and rabbit. The reddish-purple mixture can be easily made into a paste by mixing it with oil and using it as a marinade. After searing, brush the meat with the paste and then saute it again in butter. Thanks to its high hibiscus content, this curry has an intense, tangy flavor.
