Hazelnuts contain less fat and do not go rancid as fast as pecan, para and macadamia nuts. They are served in muesli, in sauces and can be made from ice cream. Likewise, they are as popular with sweet pastries as they are with hearty dishes and they are made from hazelnut oil and hazelnut butter. These hazelnuts are finely chopped and roasted in butter can be used to make hazelnut brittle. Also delicious in chocolate. Best kept in the refrigerator.
