Almond trees belong to the rose family. A basic distinction is made between sweet and bitter almonds. Sweet almonds are the best-selling and most popular among confectioners. They have a delicate texture and a characteristic sweet taste. Among other things, they are used to make marzipan. Raw bitter almonds are highly poisonous due to their prussic acid content and can be fatal! However, cooking or baking destroys the prussic acid and also eliminates the bitter taste. These sweet almonds are blanched, meaning the brown skin has been removed with boiling water.
